Quick and Clean Spring Broth Recipe for a Healthy Boost

Fresh Spring Salmon Broth (ready in 10 minutes)

Ingredients (serves 2)

  • 1 bunch asparagus, thinly sliced

  • 1 small bag peas

  • 500ml good quality chicken bone broth

  • 2 salmon fillets, chopped into chunks

  • 200g chickpeas, rinsed and drained

  • 2 tsp capers

  • 1 tbsp apple cider vinegar

  • A pinch of salt and black pepper

  • 1 bunch fresh basil, roughly chopped

Method

  1. Pour the bone broth into a large saucepan and bring it to a gentle boil.

  2. Add all the ingredients to the pan (except the basil)

  3. Turn the heat down, cover and let it simmer for about 5 minutes, until the salmon is just cooked (it will flake apart) and the vegetables are tender but still bright.

  4. Adjust the seasoning to taste

  5. Add the basil just before serving.

Scoop into bowls and eat straight away.
